Avocado Spinach Pasta

This tasty Avocado Spinach Pasta dish is the perfect meal for the entire family. It's great for a stage 3 chunky puree, finger food for 9 months and up, a toddler meal or even for adults!

Avocado Spinach Pasta

Ingredients

  • 8 oz pasta of choice
  • 1/2 avocado, ripe
  • 1/2 cup baby spinach, fresh
  • 1/2 cup basil
  • 1/4 cup parmesan, grated
  • 1 clove garlic
  • 2 tbsp lemon juice, fresh
  • 2-3 tbsp olive oil
 

Instructions

  1. In a large saucepan, bring water to a boil and cook pasta according to the directions on the box. Drain. 
  2. Meanwhile, in a food processor or blender, add the avocado, baby spinach, basil, parmesan, garlic, lemon juice, and olive oil. Pulse or run the machine until all the ingredients are incorporated, and you have a pesto-style sauce. 
  3. Spoon the avocado spinach pesto into the pasta and mix. You can add as much or as little as you prefer. 

 

Notes 

Age: 9+ months, to serve to your baby 6+ months omit the parmesan cheese. 

Yield: 6 portions

Storage: you can store this dish in the fridge for up to 3 days.

Stage 3 Puree: for a true Stage 3 puree, pulse the pasta with a small amount of sauce until the pasta is broken up into small 'pea'-size pieces.
