Butternut Squash & Cottage Cheese Mash with Nutmeg

Butternut Squash & Cottage Cheese Mash with Nutmeg

Ingredients

  • 1 cup butternut squash, cubes (fresh or frozen)
  •  1 cup whole milk cottage cheese
  • pinch of nutmeg 
 

Instructions

  1. In a medium saucepan, bring 2″ of water to a boil over medium heat. Place the butternut squash into a steamer basket, cover, and cook for 12 minutes or until tender. Let cool slightly.
  2. Place the cooked butternut squash onto a cutting board and cut the cubes into small 'pea-size pieces. 
  3. Toss the butternut squash with cottage cheese.
  4. Spoon into your baby's bowl or onto their high chair and sprinkle on a pinch of nutmeg. 

 

Notes 

Age: 9+ months, to serve to baby 6+ months leave the butternut squash in bigger shapes so your baby can pick them up to eat. 

Yield: 6 portions

Storage: you can store this dish in the fridge for up to 3 days.

Stage 3 Puree: for a mashed chunky puree, you can either mash this dish with the back of a fork until chunk or place all ingredients into a blender and pulse for 5 -10 seconds or until just incorporated.
