Easy Butternut Squash Soup

This warming Butternut Squash Soup is a fun meal to have your baby or toddler eat with their favorite dunkers - grilled cheese, cheesy toast, veggies, crackers, meatballs, tortellini, or even biscuits.

Easy Butternut Squash Soup

Ingredients

  • 1 tbsp olive oil 
  • 1/2 yellow onion, roughly chopped
  • 1 clove garlic, minced
  • 1/2 tsp dried sage
  • 1/8 tsp nutmeg
  • 2 cups of butternut squash, cubed (fresh or thawed from frozen)
  • 1 apple, peeled, cored, and roughly chopped
  • 3 cups chicken or veggie broth, regular, low or no sodium
  • slat and pepper, to taste (optional)
 

Instructions

  1. In a large pot, over medium heat, heat the olive oil. Add the onion and cook for 3-5 minutes or until translucent. Add in the garlic, sage, and nutmeg, and cook for another 1-2 minutes. 
  2. Add in the butternut squash and apple, stir and let cook for 3-5 minutes. 
  3. Pour in broth and bring to a boil over high heat. 
  4. Reduce heat to low, and let the soup simmer for 15-30 minutes depending on how much time you have. 
  5. Transfer the soup to a blender and add any salt and pepper. Puree for 1-2 minutes or until completely smooth. 
  6. Pour into a bowl and serve with a swirl of heavy cream (optional). 

 

Notes 

Age: 9+ months

Yield: 8 servings (enough for the whole family)

Storage: you can store the soup in an air-tight container in the fridge for up to 5 days or in the freezer for up to 3 months.
