Easy Butternut Squash Soup
This warming Butternut Squash Soup is a fun meal to have your baby or toddler eat with their favorite dunkers - grilled cheese, cheesy toast, veggies, crackers, meatballs, tortellini, or even biscuits.

Easy Butternut Squash Soup

Ingredients
- 1 tbsp olive oil
- 1/2 yellow onion, roughly chopped
- 1 clove garlic, minced
- 1/2 tsp dried sage
- 1/8 tsp nutmeg
- 2 cups of butternut squash, cubed (fresh or thawed from frozen)
- 1 apple, peeled, cored, and roughly chopped
- 3 cups chicken or veggie broth, regular, low or no sodium
- slat and pepper, to taste (optional)
Instructions
- In a large pot, over medium heat, heat the olive oil. Add the onion and cook for 3-5 minutes or until translucent. Add in the garlic, sage, and nutmeg, and cook for another 1-2 minutes.
- Add in the butternut squash and apple, stir and let cook for 3-5 minutes.
- Pour in broth and bring to a boil over high heat.
- Reduce heat to low, and let the soup simmer for 15-30 minutes depending on how much time you have.
- Transfer the soup to a blender and add any salt and pepper. Puree for 1-2 minutes or until completely smooth.
- Pour into a bowl and serve with a swirl of heavy cream (optional).
