Easy Veggie ‘Fried’ Rice

This Easy Veggie “Fried” Rice is a healthy toddler and baby meal. Filled with veggies, protein as well as a ton of flavor – this easy dinner is great for the whole family. 


Nutritional Information

  •  Whole grain rices, like brown rice and wild rice, will be higher in fiber and vitamins and minerals, like iron, B vitamins and magnesium.
  • White rice will not have much fiber or as many vitamins and minerals, unless it has been enriched, which just means nutrients have been added back.  Read the label to find out if it has been enriched.
  • All rice is a good source of carbohydrates, which are necessary for energy.
  • Unfortunately, all rice, even organic and whole grain rice, is susceptible to absorbing the metal arsenic from the ground it is grown in, which is can be toxic when too much is ingested.

Easy Veggie ‘Fried’ Rice

Ingredients

  • 1 tablespoon olive oil
  • 1 cup mix of chopped vegetables fresh or frozen
  • 1 clove garlic minced
  • 1 egg
  • 2 cups cooked rice jasmine, brown or riced cauliflower
  • 1 tablespoon coconut amnios or low-sodium soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. In a medium skillet, over medium heat, heat the oil. Add in the vegetables and garlic and sauté for 3-5 minutes or until tender. 
  2. Turn the heat to low, and push the vegetables to the side of the skillet. Crack the egg directly into the skillet and scramble for 3-4 minutes. Mix the egg pieces in with the vegetables.
  3.  Add in the cooked rice, coconut amnios, and sesame oil and mix until incorporated.
  4.  Let cool slightly. Cut any vegetables into age-appreciate pea-size pieces before serving.
