Sweet Potato Carrot Cauliflower Puree with Chia Seeds

Sweet Potato Carrot Cauliflower Puree with Chia Seeds

Ingredients
- 2 sweet potatoes, peeled and cubed
- 1 large carrot, peeled and chopped
- 1 cup cauliflower florets
- 1/4 teaspoon chia seeds
Instructions
- In a medium saucepan, bring 2 inches of water to a boil. In a steamer basket, add the sweet potato, carrot, and cauliflower, place the basket over boiling water, and cover. Steam for 12-15 minutes or until all ingredients are tender when pricked with a fork. Remove from heat and let cool slightly. Reserve steamer water.
- Transfer the sweet potatoes, carrots, and cauliflower to a blender or food processor and add in the chia seeds. Add in 1/2 cup liquid (steamer water, fresh breast milk, formula, stock or water).

Puree all of the ingredients at high speed for 1-2 minutes or until you reach your desired consistency. Add additional liquid in 1/4 cup increments if the puree is too thick. I had to add 1 cup of reserved steamer water to the puree pictured above.

Yield: roughly 28 ounces
Storage: Fridge – store in an airtight container in the fridge for up to 4 days. Freezer – can be frozen for up to 4 months.
